Le Crottin de Chavignol has a white or blue thin flora on the rind. The paste is white, tight, brittle and homogeneous. The mushroomy aromas are very present in the nose and in mouth you can grasp a more goaty, hazelnutty and citrusy flavours.
Our crottin de Chavignol comes from Romain Dubois's company. This cheese is the family's main specialty and Romain is the 5th generation of refiners. Know-how, tradition and authenticity are the bases of his work. Passed on from father to son, the gestures remained the same and he perpetuated this heritage for our enjoyment. The cheese has obtained AOP in 1996.
