The rind is white and thin and the paste is beige with small holes. The heart can be chalky at the beginning and it becomes more creamy with maturity. The texture is unctuous and can become runny with age. In mouth it tastes of fresh mushrooms and dried nuts.
Company created in 1930 by Etienne Donge, it is now a reference in the manufacture of the king of the cheese. Located in the Meuse department, the dairy has been ran since 2002 by the brothers, Jean Michel and Luc Donge. They sell their Brie and Coulommiers essentially to Cheese mongers and wholesalers around France and overseas. The cheese has been AOP since 1996.
