Ganevat, a star winemaker from the Jura region
Jean-François Ganevat is a well-regarded, minimal interventionist wine producer based in the commune of Rotalier in the mountainous Jura wine region of eastern France. The domaine has been family-owned since 1650 and is currently run by Jean-François Ganevat, who previously trained and worked at Domaine Jean-Marc Morey in Chassagne-Montrachet.
A unique winemaking process
Jean-François uses old and individualized winemaking techniques. He de-stems by hand, uses no new oak, ages white wines on the lees for a minimum of two years and, in 2006, completely eradicated the use of sulfur.
