This goat is one of the last productions from the Beillevaire's workshop. Le Cabri d'ici is an ashy cheese with a pleated rind. Creamy in the border and a bit chalky in the middle, this cheese is nutty, buttery and lactic. You can appreciate it easily fresh and creamy or bit refined.
Made in vendee is a natural rind sprinkle with ash. The small puck (palet) weigh around 160g and has different texture : from chalky, mousse to creamy.
