The Lamy family works the vine in Saint-Aubin since 1640. Today, domaine Hubert Lamy extends over 18 hectares spread over the appellations Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. Olivier Lamy takes over in 1996 after an experience at domaine Meo Camuzet. Since then Olivier didn’t stop innovating in order to capture greater and greater terroir expression. The main innovations are taking place in the vineyard where Olivier is experimenting different plantation densities and pruning systems as well as putting great care into the genetic selection of the new plantations. All this in order to get low productive plants with small, concentrated berries. This brings more ripeness, more flesh and more minerality in the wines. In the cellar, vinification is traditional and the wines are matured for 2 years in big 600l oak vats (close to none being new). Lees stirring is almost prohibited and only a little bit of sulphur is being used. Wines undergo a minimal filtration before bottling. "The wines are highly pure and mineral. Each one of them reflects their terroir of origin and they’re often of greater quality than their more fashionable neighbours"
