Guillaume GILLES
Guillaume is a very talented young winemaker. After years working with Robert Michel (Cornas most emblematic figure) and Jean-Louis Chave, he started his own domaine in early 2000. Besides being his mentor, Robert Michel also leased his best parcel of Les Chaillots to Guillaume and provided him with his cellar when he retired in 2006. Although his vineyard is very steep and demanding, Guillaume works by hand, eschews chemicals and plows the soils.
The grapes are vinified in whole cluster and fermented with indigenous yeasts. The wines are aged in old demi-muids without filtration or fining.
